Directions:
Wash all of the vegetables thoroughly. A simply rough chop is all that's needed, as they will be discarded.
Combine all ingredients in large pot and bring to boil. Reduce heat and simmer, uncovered, for 1 hour.
Line strainer or colander with cheesecloth and set over a large bowl. Strain stock. Discard the vegetables and bay leaves, as they've served their purpose.
Refrigerated, this stock will keep for 3 to 4 days.
Frozen, it will keep for 2 months.
