Tips and Hacks
If you have stained plates and dishes, soak them in a mixture of baking soda and hot water. Let them stand overnight, then rub with a moist cloth dipped in salt. Wash and dry as usual.
Ultimate Christmas Cookies

Directions:

Preheat oven to 350°F / 180°C / Gas Mark 4

- Line baking sheets with parchment paper and set aside.

Sift together the flour, cocoa, baking soda, ground cinnamon, mace, nutmeg, ginger and allspice. Set aside.

Cut candied fruits, dates and figs into small pieces and toss with a small amount of the spiced flour mixture. This will stop the fruits from clumping in the mixture.

Place the lightly floured fruits in a large bowl. Add the chopped pecans and raisins. Set aside.

In a separate bowl, beat the butter and sugar with an electric mixer on high speed until light and fluffy; about 2 minutes.

Add the eggs, one at a time, mixing well after each addition.

Mix in the coffee. Stop the mixer.

Add the flour mixture. Mix on low speed just until combined.

Using a wooden spoon, fold in the fruit and nut mixture to coat all the pieces.

Drop batter onto baking sheet in walnut-size mounds leaving about 2 inches between each cookie.

Bake until set and tops are lightly browned, 14 to 16 minutes.

Transfer to a wire rack to cool.

Store in an airtight container. Be sure to date and label the container.

The cookies may be glazed or sprinkled with confectioners sugar, if desired.
