Trout With Bacon

Additional Info:

In Wales this dish is known as Brithyll a Chig Moch. Traditionally it was cooked on an open fire, with the fish encased in mud.

Directions:

Preheat oven to 375°F / 190°C / Gas Mark 5

- Loosely chop the herbs, mix with the butter. Set aside.
- Clean the rainbow trout, leaving the heads and tails on.

Smear the butter herbs on the inside of the trout. Wrap a strip of bacon around each fish.

Individually enclose each rainbow trout in foil. Bake in a preheated 375°F oven for 25-30 minutes.

Open the top of the foil; paint each fish with additional butter and herbs.

Serve with boiled potatoes and plain fresh vegetables.
