Plum Tomatoes chopped
Green Beans frozen
Italian Seasoning dried
Feta Cheese crumbled
For this recipe, you can substitute 1/4 cup toasted, chopped walnuts for the pine nuts.
In a dry sauce pan on medium heat; toast the Pine nuts. Set aside.
Drain green beans, and dry slightly pressing between layers of paper towels.
Sauté garlic and Italian seasoning in hot olive oil in a large skillet over medium heat for about 1 minute. Add green beans and sauté for an additional 5 to 7 minutes.
Stir in tomatoes and cook stirring constantly for 2 minutes or until thoroughly heated.
Add lemon juice, salt, and pepper. Sprinkle with feta cheese and pine nuts.
