Sweet Pumpkin

This dish is also known as Kadu Bouranee.

Ingredients are for 4 Servings.

Peel the pumpkin, remove the seeds and cut into 2 inch cubes. Set aside.

Heat corn oil in a large frying pan. Add the pumpkin cubes and saute for a few minutes until they are lightly browned.

Meanwhile: In a bowl; mix together tomato sauce, garlic, water, sugar and 1/2 teaspoon salt.

Add this to the pumpkin in the frying pan.

Cook for 20 to 25 minutes over low heat until the pumpkin is fork tender.

While you are waiting for the pumpkin to cook; mix together yogurt, finely chopped ginger, freshly ground coriander, the remaining salt and 1/4 teaspoon black pepper.

To serve:
Spread half the yogurt sauce on a plate and lay the pumpkin on top.

Top with the remaining yogurt and any cooking juices left over from the cooked pumpkin.

Garnish with a sprinkle of chopped mint.
