Squid With Garlic & Tomato

Ingredients are for 2 Servings.

This dish is also known as Adobong Pusit

Directions:
Crush all of the garlic but keep it separate. You'll need 6 crushed cloves of garlic for the 1st cook, and the remaining 4 crushed cloves of garlic for the 2nd cook.

Wash the squid very well. Remove the long thin membrane in the head and slit the eyes to bring out the ink.

Place the squid in a saucepan with vinegar, 6 cloves crushed garlic, salt and pepper. Cover and cook slowly until the squid are tender. Cut cooked squid into 1/2 inch slices crosswise. Reserve the cooking liquid

In a separate pan, sauté the onion and remaining 4 cloves of crushed garlic in lard until the onion is softened and translucent.

Add the tomatoes and Vetsin. Cook until tomatoes are very soft.

Add the squid and the liquid in which they were boiled into the tomato mixture pan. Simmer for 7 minutes.

Taste the broth and season with additional salt and pepper if needed.
