For this recipe you can use the nuts of your choice. Peanuts, salted mixed nuts or walnuts work well.
In a heavy saucepan boil the sugar, water, vinegar, cinnamon and vanilla together.
Turn the heat down to medium and add the nuts. Stir until all of the nuts are thoroughly coated.
Pour out onto a baking tray covered with parchment paper. Separate nuts with a fork.
Enjoy warm or cold.
