Shrimp And Feta Cheese

Ingredients are for 6 Servings.

In Greek cuisine, this dish is known as Garides Kokkiyia Me Feta.

Directions:

Preheat oven to 350°F / 180°C / Gas Mark 4

Shell and devein the shrimp. Sprinkle lightly with lemon. Set aside.

Heat the olive oil in a frying pan and cook the onion until soft and translucent.

Add the ground tomatoes, chopped tomatoes, garlic, parsley, basil, salt and pepper.

Simmer for 25 minutes, then remove from the heat. Check for seasoning and add more salt and pepper to your taste.

Butter 6 large, individual ovenproof dishes. Spoon a little tomato sauce mixture into each to cover the bottom of the dishes.

Fill with the shrimp and spoon the sauce over top.

Add crumbled feta cheese on top and bake in a preheated 350°F oven for 15 to 20 minutes, until heated through and the cheese has melted.

Garnish with additional basil or parsley and serve hot.

You can bake this recipe in a casserole dish, for the same amount of time.

To prevent cheese from molding, store it in an air tight container with a couple of sugar cubes. Be sure to date and label the container.
