Salmon Loaf

This dish is delicious served as a sandwich, or as a slice, served with a salad.

Directions:

Preheat oven to 375°F / 190°C / Gas Mark 5

Spray a small loaf pan with cooking spray; set aside.

Drain and flake the canned salmon and add it to a bowl.

Add chopped mushrooms, chopped onions, beaten egg, lemon juice and lemon peel. Mix well.

Add breadcrumbs and mix, just to incorporate the breadcrumbs.

Place the mixture in the prepared loaf pan.

Sprinkle the top with dried rosemary and pepper.

Bake in a preheated 375°F oven for 40 minutes.
