Scalding tomatoes, peaches or pears in boiling water before peeling makes it easier on you and the fruit, and the skins will slip right off.
Roast Beaver

Ingredients

Directions:

Before baking, preheat oven to 325°F / 160°C /Gas Mark 3

The beaver will need to soak overnight.

Wash beaver thoroughly. Allow to soak overnight in 1/2 cup vinegar, 2 tablespoons salt, and enough cold water to cover.

The next day, remove the beaver from the brine. Wash thoroughly.

Cover with a solution of 2 teaspoons of baking soda to 2 quarts water. Bring to a boil, reduce heat and simmer 10 minutes.

Remove the beaver and place in roasting pan. Cover with sliced onions and bacon; season with salt and pepper.

Place lid on roaster and bake in a slow, preheated 325°F until tender. About 4 to 5 hours.

Serve with a tart jelly.
