To determine if an egg is fresh, immerse it in a pan of cool, salted water. If it sinks, it is fresh; if it rises to the surface, throw it away.
Poppy Seed Almond Muffins

Preheat oven to 350°F / 180°C / Gas Mark 4

Grease or use muffin papers to line two 12-cup muffin tins.

Combine flour, sugar, baking powder, and salt. Mix to incorporate.

In another bowl whisk vegetable oil, milk, eggs and almond extract until smooth.

Add dry flour ingredients to the wet ingredients. Mix thoroughly. Gently stir in the poppy seeds.

Fill muffin tins 3/4 of the way to the top. Bake in a preheated 350°F oven for 30 minutes.
