Preheat oven to 350°F / 180°C / Gas Mark 4

- The grated cheeses can be any combination of Kefalotyri, Mizithra, hard Ricotta or Romano cheeses.
- Saltsa Kima is a Greek meat sauce
- Saltsa Aspri is Greek white sauce

Lightly beat 4 of the eggs and set aside.

In a large pot, boil the Ziti pasta in salted water until almost tender. Drain thoroughly.

In a large bowl, combine the Ziti, 1-1/2 cups grated cheeses, butter, and the 4 lightly beaten eggs you set aside earlier. Stir to mix thoroughly.

Butter a 11" x 15" x 3" casserole dish, and in it layer half the pasta mixture.

Separate 2 of the eggs (yolks separated from whites). Combine the 2 egg whites plus 1 more whole egg with the Saltsa Kima. Spread it evenly over the Ziti pasta in the pan and cover with the remaining pasta. At this stage you should only have 2 egg yolks remaining.

In a bowl, combine the Saltsa Aspri with the remaining 2 egg yolks, ground cinnamon and grated nutmeg. Stir to mix thoroughly and pour over the pasta mixture, spreading it into the corners with a spatula.

Sprinkle the top generously with the remaining cheese and the bread crumbs. Bake in a preheated 350°F oven for 45 minutes or until a golden crust develops and the sauce bubbles.

Remove from the oven and allow to stand for 15 minutes before cutting into squares. Serve on a warm platter.

This is a very rich dish. It will still be delicious if you want to reduce the meat sauce and the white sauce by one cup.
