Directions:
You can substitute lamb for the mutton. You won't need to cook it as long because lamb is more tender than mutton.
Place mutton, carrots, potatoes and onions in saucepan and cover with cold water. Add salt and pepper and parsley.
Slowly bring to a boil and skim the fat off the top.
Simmer over a very low heat for approximately 2 hours or until the meat is tender.
