Milkfish In Sour Broth

This dish is known as Sinigang Na Bangus in Philippine cuisine. Milkfish in the Philippines is called Bangus. You can substitute Sea Bass for the Milkfish.

Directions:
Cut the Milkfish into 4 to 6 pieces. Salt each piece.

Boil water and cook tamarind pods until the pods are tender. Remove tamarind, mash well and return back to the boiling water.

Add tomatoes, onions and green beans to the boiling mixture and cook 15 minutes or until vegetables are almost cooked.

Add fish pieces, banana hearts, and fish sauce. Bring to a boil.

Lower heat to medium and simmer for 3 to 5 minutes.

Remove from heat, add spinach, and let stand for 5 minutes.

Serve with additional fish sauce.
