Lemon Bars

Ingredients are for 36 Portions.

2 cups
2/3 cup
1/2 cup
3 large
1 1/2 cups
1/4 cup

Preheat oven to 350°F / 180°C / Gas Mark 4

For the crust:
In bowl combine 1 1/2 cups of flour, powdered sugar and softened butter.

Pat into 9 X 13 oven proof pan.

Bake in a preheated 350°F oven for 20 minutes.

While it is baking, whisk together eggs, the remaining flour, sugar and lemon juice.

Pour over crust while crust is still hot.

Bake for an additional 20-25 minutes, or until top is golden brown.

Cool on a wire rack and dust with additional powdered sugar if you like.

Long sprigs of rosemary tied together make an excellent basting brush for the barbecue. When you're finished basting your food, throw the sprigs onto the coals for added flavor.
