Grilled Milkfish

Additional Info:

This dish is known as Inihaw Na Bangus in Philippine cuisine. Milkfish in the Philippines is called Bangus. You can substitute Sea Bass for the Milkfish.

Directions:

Preheat oven to 425°F / 220°C / Gas Mark 7

With sharp knife, cut along back of the fish and remove the backbone.

Rub the Milkfish inside and out with 2 lemon slices. Season with salt and pepper.

Mix tomatoes, onions and green onions. Stuff fish with the mixture through its back opening.

Wrap in foil and bake in a hot, preheated, 425°F oven for about 20 minutes.

The fish is done when it flakes easily with a fork.

Serve with lemon slices and fish sauce for dip.
