For this recipe, Chinese 5 spice works well instead of the cumin. The seasoning in this dish is entirely up to you.
Remove the skin and as much fat as you can from the chicken gizzards.
Slice and place the gizzards in a stock pot.
Add the water and the seasonings. Bring to a boil.
Lower the heat to medium-low, cover the pot and simmer for 2 hours.
