Tips and Hacks
If you have stained plates and dishes, soak them in a mixture of baking soda and hot water. Let them stand overnight, then rub with a moist cloth dipped in salt. Wash and dry as usual.
Feta Cornmeal Muffins

Ingredients are for 16 Servings.

Preheat oven to 400°F / 200°C / Gas Mark 6

Into a large bowl sift together cornmeal, flour, baking powder, baking soda, salt and cumin.

Add the crumbled Feta cheese and sliced scallion; toss to mixture well.

In a separate bowl, whisk together the eggs, milk, sugar, and olive oil.

Add the milk mixture to the cornmeal mixture. Stir the batter until it is just combined.

Pour into greased non stick muffin pans.

Bake in a preheated 400°F oven for 20 minutes until lightly browned and springy to the touch.

Let the muffins cool in the pan for 5 minutes. Run a thin knife around the edges of the pan to release the muffins.

Turn out onto a rack and let it cool completely.
