Deep Fried Pickled Okra

You will need 3 shallow dishes, set up as a dredging station.

Directions:

Heat oil to 375°F / 190°C / Gas Mark 5

- Drain the pickle juice from the okra.
- Place the flour in a shallow dish.
- Place the cornmeal in a shallow dish

Beat eggs, milk, and hot red pepper sauce together until well blended. Place in another shallow dish.

Dredge (dip), the okra into the flour, then dip into egg mixture, and then dredge in yellow cornmeal.

Put breaded okra on a baking sheet. Ready for deep frying. This recipe can be made to this point several hours in advance.

In a deep-fryer or large, heavy pot, heat about 4 inches of peanut oil to 375°F. Carefully lower okra into hot oil in batches. Don't crowd the pot as it will lower the oil temperature.

Cook until golden brown, about 2 minutes. Drain on paper towels and serve warm.

Tested and True
When using cornstarch and water mixture to make a "slurry", throw any extra in the trash and not down the drain. Cornstarch will solidify and clog your drains.
