Vegetable Oil for deep frying
Remove the fat and outer membrane of gizzards. Make a few slashes in each; cut in thirds.
Combine cornstarch, soy sauce and salt. Add to gizzards and toss gently to coat.
Heat oil in a deep pan. Add gizzards, about half a cup at a time, and deep-fry until golden.
Drain on paper towels.
Serve hot, sprinkled with pepper.
