Cornmeal Bacon Dumplings

Ingredients are for 4 Servings.

You can also drop the dumpling mixture by the spoonful, directly into your favorite casserole 10 minutes before it finishes cooking.

Directions:
Fry the bacon to crisp. Drain and reserve the fat. Dice the crispy bacon. Set aside.

In a bowl, mix together the flour, cornmeal, baking powder, Tabasco sauce and diced bacon.

In another bowl, combine the scallions, 1 tablespoon of reserved bacon fat, the egg and chicken stock.

Add this mixture to the dry ingredients and mix just enough to blend.

Bring a saucepan of water to a boil and drop tablespoonfuls of mixture into the water. Cover and gently simmer for 10 minutes.

Uncover and cook for a few minutes more, just long enough to dry out each dumpling slightly on top.

Tested and True
The difference between gelatine and agar is; gelatine needs to be cooled to set up, agar agar doesn't. Agar will set up regardless if it's cooled or not.
