Cold Avocado Soup

This velvety green soup is a perfect starter for warm weather meals. Serve it with sandwiches for lunch.

Pit and peel the avocado, cut it into chunks.

In a blender, whirl the avocado, half and half cream, chicken broth and lemon juice until smooth. Add salt to taste.

Ladle the soup into wide shallow bowls. Garnish each portion with chives, if desired.
