Christmas Borscht

This dish is traditionally served on Christmas Eve in Polish cuisine.

Ingredients are for 8 Servings.

32 ounces
3 cups
1 stalk
1 large
1 whole
1 clove
1/4 teaspoon
1/4 teaspoon
1 tablespoon
1 teaspoon
Optional Ingredients

1 container
1 sprig
Directions:
Drain beets reserving liquid. Set aside.

In a large saucepan combine beet liquid, water, celery, carrot, bay leaf, garlic, peppercorns and salt.

Bring to a boil.

Cover, reduce the heat to medium and simmer for 15 minutes.

Remove vegetables and seasonings with a slotted spoon.

Stir diced beets into the seasoned liquid.

Add lemon juice and sugar.

Continue cooking for 10 minutes or until heated through.

Serve topped with sour cream and, or dill sprigs, if you like.
