- Remove fat and outer membrane of gizzards; cut each in 6 slices.
- Slice onion, water chestnuts, and bamboo shoots.
- Mince ginger root.
Heat oil in a wok or a large frying pan. Add onions and ginger; stir fry a few times to mix the ingredients.
Add gizzards and stir-fry 1 to 2 minutes.
Stir in soy sauce, sherry and salt.
Add sliced water chestnuts, bamboo shoots and water.
Heat quickly; then lower the heat to medium. Simmer, covered, until tender about 20 to 30 minutes.
To serve, spoon over your favorite rice.
