Pearl Onions

Directions:
Wash and trim carrots. Peel onions.
Place the baby carrots and pearl onions in pot with 1/2 inch water. Cover and simmer gently for 10 minutes.
Remove lid and boil rapidly, stirring gently, but continually, to prevent burning, until water is absorbed.
Lower the heat. Stir in the cream. Add salt and pepper to taste.
Serve hot with a very light sprinkling of nutmeg.
