Amaretto Cheesecake

Ingredients are for 12 Servings.

Directions:

Preheat oven to 325°F / 160°C / Gas Mark 3

Combine Graham cracker crumbs and butter; press over bottom and sides of greased 9 inch spring-form pan. Chill in the refrigerator while you prepare the rest of the ingredients.

Beat together ricotta cheese and cream cheese until smooth. Add sugar, Amaretto liqueur and salt. Continue beating until the sugar has dissolved.

Add eggs, one at a time and beat until smooth. Pour mixture into chilled Graham cracker crust pan.

Bake in a preheated 325°F oven for 1 hour and 15 minutes or until firm in middle. Cool 20-30 minutes in pan before removing the spring form.

Cool completely before serving.
