Combine almonds, sugar and water in a heavy skillet. Place over medium heat and stir constantly.
After about 5 minutes, the sugar will crystallize and stick to the almonds. Keep cooking and stirring until the sugar liquefies, making the almonds shiny.
Pour onto a large baking sheet and quickly separate the almonds as much as possible with a pair of forks which have been dipped in oil.
When the nuts are cold, store in a jar with a tight fitting lid. Label and date the jar.
