You can substitute red bell peppers or yellow bell peppers for the green bell peppers.


Preheat oven to 350°F / 180°C / Gas Mark 4

Place whole eggplants and sweet bell peppers on an oven proof tray and bake in a preheated 350°F oven until tender when pierced with a fork.

Remove the skin and seeds from the hot vegetables and chop or mince together. Season to taste with salt and pepper.

Add minced garlic and lemon juice.

Gradually stir in as much of the oil as the vegetables will absorb. Mix well.

To serve: Arrange on a glass dish and sprinkle with chopped parsley.
