Ziti And Broccoli Casserole

1 pound Ziti pasta
6 ounces Mushrooms
5 tablespoons Butter » divided
1 tablespoon Olive Oil
4 cups Broccoli » florets
1/2 cup Carrots » thinly sliced
2 tablespoons Water
3 tablespoons All-purpose Flour
2 cups Light cream
1 cup Sharp Cheddar Cheese
1 cup Parmesan Cheese
1/2 teaspoon Salt » to taste
1/4 teaspoon Black Pepper » to taste
1 cup Walnuts » chopped

Directions:
Preheat oven to 375°F / 190°C / Gas Mark 5

- Cook Ziti pasta according to the package instructions.
- Drain and set aside.

1. Trim and remove stems from mushrooms.

2. Melt 1 tablespoon of butter or margarine in a large skillet over moderate heat.

3. Stir-fry mushrooms caps and stems 1 minute until coated with butter.

4. Remove the mushrooms and set aside.

5. Add 1 tablespoon oil, broccoli and carrots to the skillet.

6. Stir-fry 1 minute.

7. Add 2 tablespoons of water; cover and cook 3 minutes until vegetables are crisp and tender; drain and set aside.

8. In the same pan, melt the remaining 4 tablespoons butter; stir in 3 tablespoons flour.

9. Cook 2 minutes, stirring once or twice.

10. Continue stirring and slowly add light cream.

11. Increase heat slightly; stir in Parmesan cheese and Sharp Cheddar cheese.

12. Add salt and pepper to taste.

13. Stir 2 to 3 minutes until the sauce thickens and bubbles.

14. In a large bowl, gently mix pre-cooked Ziti, mushrooms, carrots, broccoli and chopped walnuts.

15. Add cheese sauce and toss gently.

16. Place into a 2-quart baking dish.

17. Cover tightly with foil and bake in the preheated 375°F oven for 25 to 35 minutes.

18. Serve hot and enjoy.
