1. In a heavy saucepan boil the sugar, water, vinegar, cinnamon and vanilla together.
2. Turn the heat down and add the mixed nuts.
3. Stir until all of the nuts are thoroughly coated.
4. Pour out onto a baking tray covered with parchment paper.
5. Separate the mixed nuts with a fork while they're still hot.
6. When cooled, store in a jar with an air tight lid.
7. Be sure to label and date the jar.
