1. Clean and cut the rattlesnake into pieces.
2. In a stockpot, combine the rattlesnake pieces with bay leaves, chopped garlic, salt, and poultry seasoning.
3. Cover the ingredients with water and bring to a boil.
4. Allow the it to cook until the rattlesnake is tender.
5. Once cooked, remove the bay leaves and drain the rattlesnake, reserving the meat.
6. Finely chop the cooked rattlesnake meat and mix it with the diced celery, hard-boiled eggs, finely diced onion, chopped sweet pickles, and mayonnaise.
7. Gently toss all the ingredients together until well combined.
8. Serve the rattlesnake salad as sandwiches, spread over quartered tomatoes, or on top of a bed of crisp lettuce.
