1. In a large mixing bowl, whisk together the walnut oil and ground cardamom to create the base of your dressing.
2. Carefully peel the prickly pears, ensuring to remove all the skin, roots, and any spiny spines.
3. Slice the fruit into manageable pieces.
4. To the bowl with the dressing, add the sliced prickly pears, cored and sliced Gala apples, chopped dates, and the red bell pepper.
5. Drizzle the salad with 2 tablespoons of Kirsch.
6. Toss all the ingredients well to ensure everything is evenly coated with the dressing and Kirsch.
7. Serve.
