1. Soak the Pork hocks in a brine mixture of 1 tablespoon salt per 1 quart of water. The hocks should be completely covered.
2. Soak the Spit Peas in plain water.
3. There should be about 2 inches of water covering the peas.
4. Place the meat and the peas in the refrigerator overnight.
5. In the morning, take the meat out of the brine and place in an 8 quart stock pot with the split peas, onions and 2 quarts of fresh water.
6. Bring it to a boil over high heat. Skim off any foam that comes to the top.
7. Reduce the heat to medium and simmer for about 6 or more hours, stirring occasionally so the peas do not stick to the bottom of the pot.
8. The meat should be falling off the bones, and the soup should be quite thick and fairly smooth.
9. Take the meat and bones out of the soup and cool slightly.
10. Remove the meat from the bones and cut into smaller pieces.
11. Put the meat back into the soup and discard the bones, they have done their job.
12. Reheat the soup if necessary.
13. Serve with a small pat of butter in the center of each bowl.
