Grilled Salmon With Leeks

4 tablespoons Butter » softened
1 clove Garlic » finely chopped
2 tablespoons Shallots » finely chopped
2 tablespoons Chives » chopped
1 bunch Watercress » chopped
1 small Lemon » juiced
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
8 medium Baby Leeks » cleaned, trimmed
4 each Salmon steaks
3 tablespoons Olive Oil

Directions:

- The Salmon steaks should be about 1 inch thick and 1/2 pound each.

1. Light the barbecue in advance so the coals are medium-hot for cooking. Or preheat a gas barbecue.

2. To Make the Herb butter: Blend the softened butter with the garlic, shallots, chives and watercress.

3. Stir in the lemon juice and season with salt and pepper.

4. Drain off any excess liquid and shape the butter into a log.

5. Wrap in plastic wrap and refrigerate until firm.

6. Blanch the leeks in boiling water for about 2 minutes, drain.

7. Refresh under cold running water to stop the cooking process and drain again.

8. Remove the outer layer of the baby leek.

9. Brush the salmon steaks and the leeks with olive oil.

10. Season with salt and pepper.

11. Place the fish steaks and leeks directly on the grill and cook for 3 to 5 minutes on each side, until the salmon is firm and the leeks are just charred.

12. Serve each salmon steak topped with a slice of the herb butter.
