1. Slice the Emu very thin. Place in a bowl and set aside.
2. In a small bowl, blend cornstarch with soy sauce until smooth.
3. Add sherry, sugar and ginger. Mix well.
4. Combine this sauce and the Emu meat; marinade in the refrigerator for 1 hour.
5. Strain marinade from the meat and save the marinade.
6. In a wok or large heavy skillet, heat olive oil and salt until very hot.
7. Add meat and brown on both sides.
8. Add garlic and mushrooms; stir fry for two minutes.
9. Add reserved marinade and heat through.
10. This Emu stir fry is delicious served over rice.
