Chocolate Peanut Butter Balls

1 cup Margarine
1 1/2 cups Graham Cracker Crumbs
1/2 cup Pecan Nuts » chopped
1 cup Coconut
1 each Powdered Sugar » box
1 tablespoon Vanilla
12 ounce Peanut Butter » crunchy
6 ounce Semi-sweet Chocolate Chips
2 ounces Paraffin Wax

Directions:

1. In a large container, melt the margarine in the microwave.

2. Add the graham cracker crumbs, chopped pecans, coconut, powdered sugar and vanilla extract.

3. Stir these ingredients until they are thoroughly combined.

4. Add the crunchy peanut butter.

5. Stir until the mixture is evenly blended.

6. Take small portions of the mixture and roll them into balls approximately the size of a walnut.

7. Place them on a tray lined with waxed paper. Set aside.

8. Prepare a double boiler: fill a pot with a couple inches of water and place a heatproof bowl on top.

9. Add the semi-sweet chocolate chips and paraffin wax and heat the water to a simmer.

10. Stir the chocolate and wax together until they are completely melted and smooth.

11. Using two teaspoons or a dipping fork, dip each ball into the melted chocolate mixture, making sure each ball is fully coated.

12. Return the coated balls to the waxed paper.

13. Allow the chocolate covered balls to set at room temperature. This should take about 15 to 20 minutes.

14. Once the chocolate is firm, transfer the chocolate balls to an airtight container.

15. They can be stored in a cool, dry place or in the refrigerator for up to 3 weeks.
