- Peel, core and cut each apple into eighths.
- Juice the limes and the orange.
1. Place the apples, candied ginger and raisins in a 4 quart stock pot.
2. Sprinkle generously with the mint, cumin, allspice and ground nutmeg.
3. Stir to coat the fruit.
4. Add Calvados Brandy, Riesling wine, lime juice, orange juice and apple juice.
5. Stir to incorporate the ingredients.
6. Bring to a boil on high heat.
7. Reduce the heat to medium and simmer for 30 minutes.
8. Place a colander over a large bowl and strain the contents of the pot.
9. Don't discard the liquid.
10. Puree the contents of the colander in a blender or food processor and return the puree to the liquid.
11. Stir to blend together.
12. Chill the soup over ice.
13. Before serving whisk in the cream and yogurt.
14. Serve in tall, iced glasses.
