This is a great make ahead dish, it keeps well in the refrigerator and reheats like a dream.

Ingredients:

1/2 pound Elbow Macaroni
1 tablespoon Butter
1 tablespoon All-purpose Flour
3 cups Milk
1 teaspoon Salt
1/4 teaspoon White Pepper
1/4 teaspoon Cayenne Pepper
2 cups Cheddar Cheese » shredded
1/2 cup Canned Tomatoes » drained, chopped
1 teaspoon Sugar

Directions:
Preheat oven to 350°F / 180°C / Gas Mark 4

- Grease a 1-1/2-quart casserole dish. Set aside.

1. Cook the pasta according to the package directions. Drain and set aside.

2. Melt the butter in a saucepan over medium-low heat. Whisk in the flour.

3. Add the milk, salt and both white pepper and cayenne pepper.

4. Stir almost constantly until the mixture thickens and is smooth. This takes about 8 to 10 minutes.

5. Add the cheese and cook, stirring, until the cheese melts.

6. Remove from the heat.

7. In a mixing bowl, combine the cooked macaroni and the cheese sauce.

8. Stir in the tomatoes and sugar.

9. Transfer the macaroni mixture to the greased baking dish.

10. Bake in the preheated 350°F oven until the surface browns, about 30 to 40 minutes.
