- Reserve 1 cup grated cheese for the top of the casserole. Set aside.
1. Cook macaroni in salted boiling water according to package directions.
2. Drain and rinse well with cold water to stop the cooking process.
3. Pour into a 3 quart casserole dish.
4. In a saucepan, melt butter and stir in flour to make a 'roux'.
5. Gradually stir in milk and sour cream.
6. Add salt and pepper to taste.
7. Cook over low heat, stirring constantly, until sauce bubbles and thickens.
8. Add 1 cup of cheese and stir until the cheese melts.
9. Pour the cheese sauce over macaroni and mix thoroughly.
10. Sprinkle the top with the remaining cheese.
11. Bake in a preheated 350°F oven for 1 hour, or until bubbly and browned.
12. Serve hot.
