Bacon Cornmeal Dumplings

You can drop these Bacon Cornmeal Dumplings by the spoonful, directly into your favorite casserole, or stew dish, 10 minutes before the dish finishes cooking.

Ingredients:
Qty Unit Ingredient
1/2 pound Bacon » diced
1/2 cup All-purpose Flour
3/4 cup Yellow Cornmeal
1 1/2 teaspoons Baking Powder
1/2 teaspoon Salt
1/4 teaspoon Tabasco Sauce » to taste
1/4 cup Scallions
1 large Egg » beaten
1/2 cup Chicken Stock
Prep Time Process Time Overall Time
10 Minutes 10 Minutes 20 minutes
Directions:

1. Fry the bacon to crisp. Dice and set aside.

2. Reserve the bacon grease.

3. In a bowl, mix together the flour, cornmeal, baking powder, Tabasco sauce and diced bacon.

4. In another bowl, combine the scallions, 1 tablespoon of reserved bacon grease, the egg and chicken stock.

5. Add this mixture to the dry ingredients and mix just enough to blend.

6. Bring a saucepan of water to a boil and drop tablespoonfuls of mixture into the water.

7. Cover and gently simmer for 10 minutes.

8. Uncover and cook for a few minutes more, just long enough to dry out each dumpling slightly on top.

Was really looking forward to these, but they didn't work out for me at all. They ended up being too dense and didn't absorb the flavors of the stew as I hoped. Not sure if I did something wrong.
