1. In a wok or large saucepan, fry the canola oil and garlic slowly.
2. Carefully watch garlic and strain it out once the garlic is light brown and crisp.
3. Save the garlic oil. It can be used in many savory dishes.
4. Wipe out the wok and place it on high heat.
5. Add 1 tablespoon garlic oil and quickly stir in the spinach.
6. Season with 1 teaspoon of salt and 1/2 teaspoon pepper.
7. Add back the crispy garlic and stir in the Chinese vinegar.
8. Check for seasoning and add more salt and pepper to taste.
9. Serve warm.

When boiling rice, stir a little olive oil or cooking oil into the water. This simple hack prevents the grains from clumping and sticking together, making sure each grain of rice remains separate and fluffy. It's a small step but it makes a big difference.
