- Use the whites and pale green parts of the Baby Leeks.
1. Spread butter evenly on one side of each bread slice.
2. Place two bread slices, butter-side down, in skillet on medium-high heat.
3. Top with baby leeks, half of the white cheddar cheese, tomato, then the remaining half of cheese.
4. Spread mayonnaise on the other bread slices.
5. Place bread, mayonnaise-side down, on top.
6. Cook until lightly browned, then flip and brown the other side.
7. Remove from pan and enjoy.
