1. Half and core the apples, leaving the peel intact.
2. Clean each Game Hen with cold running water, inside and out.
3. Pat dry with paper towels.
4. Stuff 1/2 apple in each bird and place in deep baking dish.
5. Mix honey, apple juice, water, and cinnamon.
6. Pour over hens, and bake in a preheated 350°F oven for 1 hour and 15 minutes.
7. Check for doneness by pulling leg away from body. If it released the Game Hen is cooked.
8. Remove the hens to a serving platter.
9. Remove the apples and place as a garnish for the platter.
10. Pour the drippings from the baking dish into a sauce pan.
11. Cook on the stove at medium-high heat.
12. Reduce by half and pour over the Hens.
