Mutton Curry

This disk is known as Elu Mus in Sri Lanka cuisine.

Ingredients are for 6 Servings

Ingredients:
Qty Unit Ingredient
2 pounds Mutton
1/4 cup Vinegar
1 medium Onion
3 cloves Garlic
4 slices Ginger
1/4 cup Vegetable Oil
1/2 teaspoon Chili Powder
2 teaspoons Paprika
1/2 teaspoon Turmeric
1/4 teaspoon Black Pepper
3 teaspoon Ground Coriander
1 teaspoon Cumin
1/4 teaspoon Fenugreek
1/4 teaspoon Curry leaves
2 cups Coconut Milk
1/4 teaspoon Curry powder
1 teaspoon Salt
Prep Time Process Time Overall Time
30 Minutes 1 Hour 45 Minutes 2 hours 15 minutes
Directions:

1. Cut the mutton into bite size pieces and place in a bowl.

2. Pour on the vinegar and leave to marinade for 30 minutes.

3. Chop the onion, then grind in a pestle and mortar with the garlic and ginger.

4. Heat the oil and fry the onion, garlic and ginger.

5. Add the chili powder, paprika, turmeric, black pepper, coriander, cumin, fenugreek and curry leaves and stir fry for 3 minutes.

6. Remove the mutton from the marinade and add to the pan.

7. Fry for 5 minutes.

8. Pour in the coconut milk together with the mutton marinade and bring to the boil.

9. Cover the pan, reduce the heat and simmer for 1 hour, or until mutton is tender.

10. Just prior to serving sprinkle with the curry powder and add salt to taste.
