Macaroni With Feta Cheese

In Greek cuisine, this dish is known as Pastitso Makaronia Me Feta

Directions:

Preheat oven to 350°F / 180°C / Gas Mark 4

- Lightly grease 9 x 12 x 3 inch casserole dish.
- Cut the Filo dough to fit the dish.
- Cover the Filo dough with a damp tea towel to avoid it drying out.
- Cook the macaroni according the the package instructions.

In a large bowl, combine the cooked macaroni, 3 tablespoons of the melted butter, beaten eggs, crumbled Feta cheese and grated Parmesan cheese. Season with salt, white pepper, and nutmeg. Mix well to incorporate all of the ingredients.

Place 6 sheets of the Filo dough in the buttered casserole baking dish. Generously brush with 3 tablespoons of butter.

Spread the macaroni cheese mixture over the Filo dough and cover with the 6 remaining sheets of filo. Brush butter between each layer and on the surface with the remaining 3 tablespoons of butter.

Using the tip of a sharp knife, score through the Filo to indicate 12 servings. This will also allow steam to release while baking.

Bake in a preheated 350°F oven for 30 minutes, or until the surface is nicely browned and crisp.

Remove to a cooling rack for 10 minutes.

Cut and serve on a warm platter.

Speed up the baking time of your potatoes. Soak them in salt water for 20 minutes before baking. This will cause them to bake rapidly.
