Shortening cold, cubed
Preheat oven to 450°F / 230°C / Gas Mark 8
If you don't own a pastry blender, you can use 2 kitchen knives to cut the shortening into the flour mixture.
Sift together flour, sugar, baking powder, salt and cream of tartar.
Cut shortening into dry mixture with a pastry blender until mealy.
Make a well in the center of the mixture and add milk, stir to blend. Put out onto a lightly floured pastry board and knead 8 times. Roll out and cut with a cookie cutter.
Place on cookie sheet and bake in a preheated oven at 400°F for 12 minutes.
