Achiote Sauce

Ingredients are for 1 Serving.

1 tablespoon
1 medium
3 cloves
1 1/2 tablespoons
1 1/2 tablespoons
2 cups
1 teaspoon
2 teaspoons
2 tablespoons
Directions:
In a saucepan, over medium-low heat melt the unsalted butter.

Add the onions and cook until soft and translucent, 7 to 10 minutes.

Stir in the minced garlic, tomato paste and Achiote paste. Cook an additional 3 to 5 minutes, stirring frequently.

Add the chicken stock, salt and black pepper. Bring to a boil.

Once boiling, reduce the heat to a simmer and cook, stirring and skimming frequently, 12 to 15 minutes.

Add the vinegar and cook for 2 to 3 minutes.

Puree in a blender or food processor.

Let cool. Transfer to a lidded container, and store in the refrigerator.

Be sure to date and label your container.

This Achiote Sauce will keep in the fridge for 2 to 3 days.
