- Thaw the Turkey if frozen. Remove the neck and giblets.
- Remove the center ribs from the Banana leaves.
1. Combine achiote paste, 1 tablespoon salt, lime juice, orange juice and oil in small bowl.
2. Spread mixture over the entire turkey.
3. Line a Dutch oven or roasting pan with banana leaves, reserving enough to cover the top of the turkey.
4. Wash turkey well, pat dry and season inside and out with salt and pepper.
5. Place turkey, breast-side up, over the banana leaves.
6. Spread sliced onions and tomatoes over top of turkey.
7. Scatter epazote over top.
8. Place the Habanero chili on top of turkey.
9. Cover turkey with more banana leaves, tucking them in to seal.
10. Cover pan tightly with lid or foil.
11. Roast in a preheated 325°F oven, basting often with pan juices, until nicely browned and thermometer inserted into deepest part of thigh reads 175°F degrees, about 2 1/2 hours.
12. Remove turkey from oven and let rest, uncovered, 15 to 30 minutes.
13. Remove and discard banana leaves and chili.
14. Place turkey on platter.
15. Puree cooked onions and tomatoes with hand blender in cooking juices to thicken sauce.
16. Carve the Turkey, drizzle with pan sauce and serve.
