1. Core apples and peel skin about 1/3 of the way down from the stem end.
2. Pierce the rest of the skin all over with a fork to lessen wrinkling and splitting.
3. Place apples in a large, deep pan, add water to a depth of 1/4 inch.
4. Mix raspberry jam with orange rind and nuts.
5. Fill the centre of each apple with this mixture.
6. Sprinkle sugar over the top of each apple.
7. Bake in the preheated 400°F oven, uncovered, until water in the pan begins to boil.
8. Then cover the pan, lower the heat to 350°F and simmer 20 to 30 minutes, depending on size of apples.
9. Baste 2 to 3 times with pan juices.
10. To Glaze the Apples: Uncover when cooked and sprinkle the top with an additional tablespoon of sugar.
11. Place under the broiler, 3 inches from the heat until lightly browned.
12. Watch closely, they will brown quickly.
13. Serve hot or cold, delicious either way.
