1. Wash and dry the Goose.
2. Cut off any excess fat from around neck cavity.
3. Prick the skin very well all over.
4. Rub skin with lemon and season with salt and pepper. Set aside.
5. In a saucepan, fry shallots in butter until softened, about 3 minutes.
6. Remove from heat.
7. Pour shallots with butter drippings into a bowl.
8. Add breadcrumbs, dried sage and cooked bacon.
9. Add eggs and mix thoroughly to incorporated all the ingredients.
10. Stuff this mixture into the Goose.
11. Sew it up and place in a roast pan.
12. Roast in a very hot preheated 475°F oven, for 10 minutes.
13. Reduce heat to 340°F and roast for 3 1/2 - 4 hours.
14. Remove to a serving platter and garnish with Spiced Apples, if desired.
